Green Olive Barley Salad
This recipe is becoming one of my new favorites - it’s crunchy, filling, and has one of my favorite ingredients…olives!
Overall it is reasonably quick to make and you can add a bed of lettuce and some lean protein for a complete meal. Normally, I will bake chicken breasts with herbs, olive oil and bone broth while I make this salad. That way everything is done around the same time and I have a nutritionally rich, complete meal.
